Grilled Coffee Rubbed Cowboy Ribeye

Grilling season is a special time of the year, and in my house I like to start it off with a bang. That’s where this coffee-rubbed cowboy ribeye comes in. For me, it’s the best cut there is, and the rub I give here adds big bold flavor. Now, is the cowboy ribeye a pricey cut? Sure is, but one steak also serves two people. That said, you can be even more budget conscious by using the same rub on a less expensive cut like sirloin. Just be aware that the leaner you go, the temperature you’re cooking becomes even more important. For example, a well-marbled ribeye or NY strip will maintain tenderness even if you go well-done. That’s not so for a London broil, which can turn into shoe leather if you’re not careful.

Grilled Coffee Rubbed Cowboy Ribeye
Ingredients
Steps
Mix the ground coffee, salt, brown sugar and pepper together in a mixing bowl.
Generously rub both sides and the edges of the steaks with the coffee rub mixture.
Allow the coffee-rubbed steaks to sit out at room temperature for 10 minutes to bring the steaks up to temp and then place them on the pre-heated grill.(medium-high heat).
Grill the steaks for 5 to 7 minutes on each side until the internal temperature is 130 degrees F for medium-rare to medium.
Allow the cooked steaks to rest for 5 minutes before slicing.
Cut the meat from the bone, slice the steak and serve. Each steak will serve 2 people.
