Carnitas Shepherd’s Pie

This recipe serves 8 so you can cut it in half or freeze if there is extra!

Steps
In a large pot over medium heat, add the oil and butter.
Add the onions, carrots and celery. Stir and sauté the vegetables for 2 minutes until onions are tender.
Add the garlic, cooked shredded pork carnitas and tomato paste.
Continue to stir and sauté the meat and veggie mixture for 1 minute until well incorporated together.
Next, add the flour, stir well and turn the heat down to low to prevent the bottom of the pot from burning.
Add the beef broth, Worcestershire sauce, canned diced tomatoes, canned corn, peas, and spices. Stir well and turn the heat back up to medium high and continue to stir until the mixture comes to a simmer. Season with salt and pepper, to taste. Set the shepherd’s pie filling aside.
