GRILLED COFFEE-RUBBED COWBOY RIBEYE

The cowboy ribeye has a two-sided reputation. On the one hand, it’s rightfully considered to be one of the best, if not THE best cut of beef you can buy. Juicy, tender, and delicious as long as you don’t burn it. On the other hand, it’s known as very pricey, an ostentatious luxury item. Well, that’s only true if you’re going to eat the whole thing by yourself, cowboy. Following healthy portion size guidelines of 6-8 ounces of beef per person, one of these bad boys should serve four. Add in the fact that it’s incredibly easy to cook and needs just a little bit of help from some thoughtful seasoning (see recipe below) to bring out its naturally bold flavors, and I think there’s a strong case that this cowboy can indeed make a good family man.

Recipe

SERVES 4 - Cut or double recipe

GRILLED COFFEE-RUBBED COWBOY RIBEYE

Ingredients

YOU’LL NEED
2 Cowboy ribeye steaks 24 oz each (bone in, meat and fat trimmed from the “handle”)
½ cup fresh ground coffee
2 tbsp kosher salt
3 tbsp brown sugar
1 tbsp ground black pepper

Steps

HOW TO MAKE IT
1) Mix the ground coffee, salt, brown sugar and pepper together in a mixing bowl.

2) Generously rub both sides and the edges of the steaks with the coffee rub mixture.

3) Allow the coffee-rubbed steaks to sit out at room temperature for 10 minutes to bring the steaks up to temp and then place them on the pre-heated grill (medium-high heat).

4) Grill the steaks for 5 to 7 minutes on each side till internal temperature is 130 degrees F for medium-rare to medium.

5) Allow the cooked steaks to rest for 5 minutes before slicing.

6) Cut the meat from the bone, slice the steak and serve. Each steak will serve 2 people.
